Not wine as such, of course : Raymond Morin uses the same Chenin and Cabernet Franc grapes as in his Crémant de Loire Rosé but after harvest less (ie none) of the sugar is converted into alcohol through fermentation. A wine with a medium mouth-feel akin to an Asti Spumante but leading to a drier finish, making for a lovely aperitif or even as a dessert wine or a perfect celebratory offering for the non-drinkers and Dry January types
