Not wine as such, of course : Raymond Morin uses the same Chenin grapes as in his Crémant de Loire but after harvest less (ie none) of the sugar is converted into alcohol through fermentation. A wine with a medium mouth-feel akin to an Asti Spumante but leading to a drier finish, making for a lovely aperitif or even as a dessert wine or a perfect celebratory offering for the non-drinkers and Dry January types
